The 4th of July is my absolute favorite holiday of the year! Anyone who knows me, knows I love birthdays and there’s no bigger birthday than that of our country. It’s a time for us to reflect on how lucky we are to live in the land of the free and the home of the brave. A time to take a look at our flag and all that it stands for. A time for us to show we are connected to one another – that we’re on the same team.
For me, the holiday starts days before the actual 4th – it’s all about the planning!
Being from Huntington Beach, CA the 4th of July parade is a really big deal. In order to get that great spot, up-close to the excitement, you must stake out your place to watch the parade two days ahead of time. By July 3 Main Street is lined with chalk, chairs, stakes and caution tape creating an overwhelming sense of excitement that the big day is almost here.
FunFawn Fact: The HB 4th of July parade has been held since 1904 and is the largest 4th of July parade west of the Mississippi.
Riding my bike around town on the 4th of July is the only way to go and that requires some decorating! Adding pinwheels, streamers and stars to your bike is a fun way to get in the spirit.

The 4th of July wouldn’t be complete without hosting or attending a BBQ. This is when I pull out my 2 quick and easy recipes that never seem to disappoint!
Greek Pasta Salad – fresh and full of flavor!
Ingredients: 1 pound short pasta (I like to use Rotini or Gemelli), 1 medium cucumber peeled and diced, 1 pint halved cherry tomatoes, 1 cup pitted kalamata olives, 6 ounces crumbled feta cheese, 1/2 diced red onion
Preparations: Bring a large bowl of salted water to a boil. Add pasta and cook until al dente, about 8 minutes. Drain and transfer to a bowl. Add remaining ingredients, toss with Bernstein’s Italian dressing and serve. Best if refrigerated for several hours before serving.
Fudge Brownies –moist and chocolatey!
Ingredients: 1 box of Ghirardelli Triple chocolate brownie mix (Shhhh, no one has to know!), white icing, star sprinkles
Preparation: Follow instructions on the box (Hint: to make the brownies extra moist add 1/4 cup mayo), allow brownies to cool, drizzle with white icing and sprinkle star candies
FunFawn Fact: Easy to transport, throw both pasta salad and brownies in large ziploc bags until you arrive to your destination.
It can be a long day starting with the parade and ending with the fireworks, so it’s necessary to stay charged and make sure you pack your purse with basic essentials.
